Oh my goodness! If it wasn't for an email I received asking for the recipe for my White Chocolate Oreo Truffles, I wouldn't have known that I never posted the recipe. With the picture being on my blog page, I just assumed that I had the recipe on here. So I dug through my notebooks filled with recipes and found it. Whew!!!

Makes approximately 40 truffles
1 package Oreo Cookies finely crushed (a little over 4 cups)
1 package Cream Cheese, softened (you can substitute with Nuefchâtel Cheese for less fat)
2 12oz bag White Chocolate chips
Line a baking sheet with wax paper and temporarily store in the freezer while preparing the ingredients. In a bowl, mix 3 1/2 cups of crushed cookies and softened cream cheese until well blended. Using a tablespoon, scoop mixture and form into a ball and set on a platter. Repeat until there are no more mixture left. Melt chocolate in a skillet over low heat stirring frequently with a whisk. Remove chocolate from heat once completely melted. Remove baking sheet from the freezer. Using 2 teaspoons, gently dip individual balls in melted chocolate, transfer to baking sheet and sprinkle truffle tops with remaining crushed cookies. Refrigerate for at least 1 hour then transfer to an air tight container and keep refrigerated. Eat as much as you want!
